Мета дослідження – оцінка рівня еколого-гігієнічної безпеки овочевої продукції, що вироблюється в Одеській області, за вмістом нітратів.
The study was aimed to assess the level of the environmental and hygienic safety of vegetables produced in
Odessa region by the nitrate content. It was stated that the frequency of exceeding the nitrate concentration in the veg!
etables is not more than 6%, however in spring season the nitrate content in the early vegetables is higher than MAC. There
were determined 2–5 folds exceeding of MAC by nitrates in such districs as Nickolaevsky, Belyayevsky, Belgorod!
Dnestrovsky, Izmailsky, Bolgradsky, Saratsky, Arzisky, Tatarbunarsky ones. The calculations of nitrates daily allowance with
the vegetables the rate of toxic exposure was in the measures of 500!1200 mg per day i.e. more than it's admissible. It is
expedient to optimize the foodproduction assessment system e.g. by the implementation of multidisciplіnary collaboration
acordingly to the social!hygienic monitoring principles.
